We reached the covered arcade while the shutters were still being rolled up. The air was already warm with dashi and something sweet — maybe soy being brushed onto eel, maybe just the wood of the stalls holding last night’s heat. I bought a paper cup of soy milk so hot it felt like a dare, and we walked without agreeing on a direction.

The pleasure of Nishiki, at least in this telling, is that nobody is performing breakfast. A woman in a navy apron sets out rectangles of tofu skin with the same care other people reserve for pastry. Pickled radish sits in ceramic crocks the color of river stones. We pointed at things we could not name and ate them anyway.

I keep a small notebook for trips. On this page it says: do not rush the first market. It also says: buy the cucumber that looks too expensive. We ate it on a side street, juice on our wrists, while a delivery bike threaded the crowd with the confidence of someone who has done this every morning for twenty years.

Later we will do temples. Later we will take the photograph with the thousand torii. This hour is the one I want on Pulse — not because it is rare, but because it is ours. The family will argue about whether the tofu was famous or merely good. I am writing it down before we agree.
